I became plant-based about eight years ago. I was a vegetarian most of my life because meat did not interest me, not even as a child. I started so long ago they didn't have all of the convenient products to buy-- I learned to make everything myself! TVP (texturized vegetable protein for products like thank you meatballs), Seiten (a chewy, high gluten wheat product that mimics the consistency of chewy meats like chicken.) Tofu-- YES! you can make tofu taste good!)
This is a great time to introduce new recipes with fresh veggie season right around the corner! Eating this way can also be a huge help with grocery expenses. Buy in bulk and share with a friend!
STUFFED SWEET POTATOES (YAMS OR PURPLE. THE PURPLE HAVE MORE ANTIOXIDENTS THEN THE YAMS.)
(1) LARGE SWEET POTATO
(1) CAN OF BLACK BEANS (or make your own from raw beans if that's your jam).
(1) AVACADO BLACK AND SOFT...NOT MUSHY!
(1) LIME
(1) BUNCH OF FRESH CILANTRO
VEGAN SOUR CREAM (OPTIONAL)
Scrub your sweet potato well with a clean dishcloth or a scrubby using soap. Rinse thoroughly. Then you can enjoy the high fiber thin skin!
Pierce the sweet potato once and microwave for 6 minutes on high. This would be the time for a large sweet potato. Check on the potato at about five minutes. Once it is soft to an easy touch, it is done. You don't want it to look like a deflated potato. They will be VERY HOT! Be careful of your hands when testing your potato.
In a skillet, add avocado oil and well rinsed black beans, Place them on medium high heat and season generously with Adobo.(start with two tablespoons and taste from there.....). You want your black beans to open a bit and get a little hard on the outside. Maybe three - four minutes.
Cut you avocado up into bite size pieces, cut your lime in quaters, and rinse your cilantro well, then chop.
Get a large bowl. Place sweet potato on bottom and carefully open it buy slicing halfway through, then quaters so it opens nicely.
Scoop about 1/2 (or more) of the black beans on top of the potato.
Add avocado and cilantro.
Squeeze two quarters of the lime over everything. Place the other two quarters in the bowl for later.
Top with plant based sour cream if you wish.
SOOOOO good. So quick to make and assemble. Share if you have a great stuffed sweet potato recipe!
ONE COOKING TIP- CILANTRO IS GROWN IN SAND. THE BEST WAY TO CLEAN IT IS BY SOAKING IT IN A LARGE BOWL OF WATER, GIVE IT A "SWISH" AND LET IT SIT. IN A FEW MINUTES YOU'LL START SEEING SAND AT THE BOTTOM OF THE BOWL. SCOOP OUT YOUR CILANTRO WITH A SEIVE AND GIVE ONE MORE RINSE.
